Butter and Herb Roasted Chicken Thighs and Winter Vegetables

Ingredients

  • 3-4 gold potatoes, diced into small pieces
  • 3 carrots, peeled and sliced
  • 1 package boneless skinless chicken thighs, trimmed
  • 1/3 cup butter
  • 1 tsp Italian seasoning
  • kosher salt
  • pepper

Instructions

  1. Preheat oven to 425°.

  2. Place diced potatoes and sliced carrots in a 9x13 baking dish. Top with chicken thighs. Season chicken with a pinch of salt and pepper.

  3. Melt butter in a bowl. Stir in Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper. 

  4. Pour seasoned butter mixture over chicken pieces and vegetables. 

  5. Bake for 40 minutes, or until chicken reaches an internal temperature of 165°.
