Preheat oven to 425°.
Place diced potatoes and sliced carrots in a 9x13 baking dish. Top with chicken thighs. Season chicken with a pinch of salt and pepper.
Melt butter in a bowl. Stir in Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper.
Pour seasoned butter mixture over chicken pieces and vegetables.
Bake for 40 minutes, or until chicken reaches an internal temperature of 165°.
