My easy and delicious homemade egg salad, just in time to use up your Easter eggs.
My homemade egg salad recipe has its roots in the Easter tradition. Every year at Easter I dye eggs with my daughters. It’s a wonderful tradition that I used to do with my mom and sister growing up, and my little girls look forward to doing it each year.
But what to do with all those hard boiled eggs?
Delicious egg salad is easy to make from scratch and a great way to use up some of those eggs. Homemade egg salad tastes much better than anything you buy at the salad bar.
My egg salad recipe is incredibly easy to make and delicious. My husband often requests that I make it for him! We enjoy eating it as sandwiches, but it is also delicious as a topping on a warm crusty baguette.
You can also use this recipe as a base for Deviled Eggs. Instead of mashing the eggs, slice them in half and scoop out the yolks. Add the rest of the ingredients to the yolks (adjust the measurements!), and add back to the egg whites. It’ll be a great hit at your next backyard cookout!
Homemade Egg Salad
Ingredients:
- 6 eggs, hard boiled
- 1/4 cup mayonnaise (I only use Hellman’s)
- 1 tsp yellow mustard
- 1/4 tsp Old Bay seasoning
Directions:
Mince the hard boiled eggs into small pieces. Add mayo and mustard. (You can add a little more mayo if you want your egg salad wetter.) Add Old Bay Seasoning. 1/4 tsp is a good starting point; you can add a little more to taste.
Homemade egg salad is great as a traditional sandwich, but it is also delicious on a warm crusty baguette!

- 6 eggs, hardboiled
- 1/4 cup mayonnaise
- 1 tsp yellow mustard
- 1/4 tsp Old Bay Seasoning
Instructions
