This is an easy and delicious meal I often make for my family. It’s very simple to throw together, and you can make as much or as little as you want without complication. You can also do pretty much any combination of meat and veggies, or you can go meatless altogether.
My preferred combination is Smithfield Smoked Sausage, zucchini, mushrooms, and bell pepper. These delicious summer ingredients are inexpensive and are a great flavor combination. You can season with fresh herbs or with what you have in your spice cabinet.
For this batch that I photographed here, I seasoned with fresh thyme, parsley, and basil from my herb plants. Usually when I don’t have fresh herbs on hand I use regular dried Italian seasoning.
Sausage and Vegetable Sheet Pan
Ingredients:
- 1 link of sausage, cut into rounds
- 3 zucchini, sliced into rounds
- 1 package of mushrooms, sliced or quartered
- 1 bell pepper, chopped
- 1-2 tsp dried minced onion (per pan)
- 1/2 tsp Paprika (per pan)
- 1 Tbsp Italian Seasoning (per pan)
- Kosher salt and black pepper
- Olive oil
Directions:
1. Preheat your oven to 400 degrees. Cut up all your veggies and put them in a large bowl.
2. Drizzle with 2-3 tbsp olive oil and mix together.
3. Place your veggies on your sheet pan(s). Spread them out evenly leaving space for the sausage, and make sure the zucchini rounds are flat on the pan.
4. Add your sausage to the bowl, and if there isn’t much olive oil left, drizzle with a touch of olive oil (about 1 tsp or less).
5. Add your sausage to the pans and spread out everything evenly.
6. Season with 1 tsp kosher salt per pan. (Tip: use your finger tips to season from up high to ensure everything is evenly coated.) Sprinkle with 1/4-1/2 tsp pepper per pan. Next add dried minced onion, paprika, and Italian seasoning. I gave rough measurements, but you can use your own discretion.
7. Bake at 400 for 20-30 minutes. If your sheet pans can’t fit side by side on the middle rack, stack one on the next highest rack and rotate them halfway through the cooking time. Begin testing for doneness at 20 minutes. In my oven everything is cooked perfectly anywhere between 22 and 25 minutes.
8. Try not to eat the deliciousness straight off the pan.
9. I like to serve this with a side of jasmine rice (with furikake seasoning).
You can experiment with combinations of meats and veggies to mix it up. You can even omit the meat all together to make a delicious veggie side.
