One of my family’s favorite summer dinners is simply eating guacamole and salsa with tortilla chips. Lately I’ve been making a very simple version of guacamole that’s easy and quick to whip up and great to eat at the end of a hot muggy Virginia day.
Usually I love to make my guac completely from scratch, but this version is just as delicious and requires much less prep – which is a god send with two small children!
You will need:
Ripe avocados
Premade Pico de Gallo
Sea Salt
Lime Juice
Note: Juice from a real lime is much better, but if like me, you don’t keep limes on hand normally, juice from the bottle will work in a pinch.
Mash your avocados (I used three).
Add your pico de gallo (I used half the container).
Add lemon juice and salt to taste. I used about 1 tsp of each.
I like to serve this with a side of salsa and blue corn chips. My husband and baby love it!
